I made again on Friday when two of our German friends came over and they LOVED it. The guy ran out to the kitchen for another bite as soon as he had finished the first one.
Nice to know people like my cooking.
Last night I just made something else really simple and good. It was a cold and wet day and I felt like something warm this time. I also needed to get rid of some ingredients that I don't use very often.
So I went and bought a bunch of cherry tomatoes and a few potatoes, used the last bit of butternut squash I had left since I baked last week, used some onions and carrot. Cut them all in fairly large pieces, put then in a glass pan, added some water, butter and soup powder, put the lid on and put in the oven for about and hour at 175C.
The last few minutes before it was done, I took it out and cracked 3 eggs on top of the vegetables, then let them cook in the oven a few more minutes.
Not a real recipe, I just needed to use up a bunch of stuff, but it was still delicious.
I made pumpkin pie cheesecake last week and even made my own pumpkin puree for it (it's very easy). Turned out just like the cheesecake at the cafes.
I can write down the recipe a bit later.
